How a Walk-In Freezer Works

 

Freezers help preserve food by removing heat from the inside of the appliance. Whether the freezer is a standalone freezer that you might find in a home or a commercial walk-in freezer that you might find in a restaurant, all freezers operate fairly similarly. Freezers contain a refrigerant gas that is specifically designed to evaporate and condense at specific temperatures and pressures in order to optimize the refrigeration cycle. The freezer system starts with a compressor. The compressor is a high-pressure pump that compresses the refrigerant gas at high pressures. When the refrigerant gas is compressed, it releases heat. This heating increases the overall temperature of the refrigerant. Once the refrigerant is heated, it travels through a condenser outside the freezer. Since the gas is outside of the freezer now, it causes the gas to cool to around room temperature. Once the gas cools, it turns it into a liquid. The liquid refrigerant then travels to the evaporator, which is a very cold area of the freezer. Within the evaporator, the liquid refrigerant quickly expands into a gas again since the temperature has cooled down. After the refrigerant evaporates, it absorbs the heat from its surroundings. This makes it cold and freezes the items within the freezer. After traveling through the evaporator, the refrigerant gas goes back into the compressor. This cycle then repeats. The heat that has been absorbed in the evaporator is distributed through the condenser. We often think of freezers working as a system that adds cold. However, it really is a system that removes heat which causes the temperature to become cold. As you can see, freezers use a sealed system that manipulates temperature and pressure in order to keep food frozen.
